In the kitchen, the Chef’s recipes celebrate the region’s iconic produce: Racan chicken, fruits and vegetables from local growers, butter and cream from the Verneuil Dairy, and exquisite cheeses such as Sainte-Maure de Touraine, Valençay, and Pouligny Saint-Pierre.

Portraits of the Chefs

Clément Dallais, the Son

With a strong family heritage, Clément Dallais has cooking in his blood. In 2015, at just 16 years old, he began his training as a pastry apprentice under Nicolas Léger in Tours before becoming a chocolatier.

 

A true enthusiast, his journey led him to the kitchens of the renowned Michelin-starred Chef Georges Blanc in Vonnas, where he honed his skills, followed by an enriching experience at Domaine Les Crayères in Reims. After these impressive culinary adventures, Clément returned to his native Touraine to join the team at Le Berlot in Montlouis.

 

In October 2021, Clément joined the ranks of La Promenade alongside his parents, bringing all his expertise to uphold the values and traditions of Maison Dallais’ Michelin-starred restaurant.

Fabrice Dallais, the Father

Passionate about cooking and pastry, Fabrice Dallais began his training in prestigious establishments such as Charles Barrier, La Chocolatière, and La Roche Le Roy (with Alain Couturier) before completing his military service at Matignon.

 

He then joined the brigade of the two-Michelin-starred Chef Guy Savoy for 18 months, a period of immense learning both professionally and personally. In 1999, after a year working with Pierre Gagnaire, Fabrice returned to Touraine to join his father, Jacky Dallais, at the family restaurant: La Promenade.

 

Committed to tradition and craftsmanship, Fabrice has been managing the Michelin-starred restaurant with his wife since 2010, proudly continuing the culinary legacy of Maison Dallais.
